This meatloaf is astoundingly delicious for the amount of fat and calories that are cut from the traditional stand in. I was not a huge meatloaf eater really. As much as I love beef it was always SO heavy and greasy. I was also allergic to a lot of the ingredients back then anyway and didn't know so it never ever sat well. This meatloaf is extremely healthy, you can have seconds, and it's actually quite healthy. Packed with spinach and some great substitutions that are actually good for you, you will make this over and over again. I also included the vegetable side dish I always serve with this meatloaf because they go incredibly well with one another. The original recipe is healthy too but the things I sub out for my allergies are actually healthier calorie wise. The original recipe is derived from one of my favorite cookbooks called "cook yourself thin" based on a great cooking show on lifetime by the same name. Great show!! One tip too...always use the 99% fat free turkey. You will be adding PLENTY of moisture In this recipe. It will taste full fat but lighter and tastier!
Preheat oven to 375 degrees
Meatloaf:
1 slice glutino fiber bread. You can use any bread but it's better to use a heartier bread. 1/2 cup almond original milk. This is the plain almond milk. Silk almond milk is amazing.
1 teaspoon of wegmans basting oil
1 med red onion diced
1 5oz bag baby spinach
1 and 1/4 lbs of 99% lean ground turkey
2 Tbsp of galaxy soy parmasean. Or regular parmesan finely grated.
1 large egg. Preferably egg lands best. They make food taste a lot better.
1/2 tsp salt Tons of fresh pepper.
1/4 tsp of ground nutmeg
In a food processor grind bread into fine crumbs. Transfer to a small bowl and pour in the half cup of almond milk. Set aside. In a sauté pan or skillet heat 1 tsp of wegmans basting oil. Toss in finely chopped onion and sauté for about five mins on med heat stirring often. When onions are translucent toss in entire bag of spinach. Toss spinach quickly around the pan about a minute or so until the spinach is wilted and reduced. Take pan off heat and transfer to a large bowl. Add ground turkey, parmesan, salt, pepper, nutmeg, egg, and crumb/ almond milk mixture. mix well old school with your hands. It will be wet. That's ok. It's very moist. Pack 2/3 cup of mixture and transfer to a olive oil greased (lightly) baking sheet. Bake for 40-45 mins at 375 degrees. It makes about six or seven. I like to double this recipe so I can eat it all week. Now for the extra tasty part. The glaze.
Glaze:
1 teaspoon dinosaur BBQ garlic chipotle sauce. Or franks red hot works well. Dinosaurs is better though.
3 Tbsp dinosaur BBQ wango tango or regular mild BBQ
2 tsp worcestershire sauce
Mix all together in a ramekin and if you have a brush, brush over loaves ten minutes after putting them in the oven and ten mins before they come out. At least twice while cooking. The original recipe called for ketchup instead of the wango tango but I am not that into ketchup.
Roasted root veggies:
Three large carrots or about 15 baby carrots sliced longways at a diagonal
6-7 small red potatoes sliced in very thin whole slices
A bag of wegmans cleaned and cut asparagus. It's about 30 or so SMALL stalks of asparagus. Cut lengthwise and diagonal.
1 tsp fresh parsley
2 Tbsp chopped scallions
1 Tsp chives dried
2 Tbsp wegmans basting oil
1 tsp salt
A lot of pepper!!
A generous pinch of fresh dill. Actually just dump a lot of dill on there and also after they are done cooking sprinkle with some more. It's insanely good!
Toss everything in a large bowl and stir until everything is mixed well. Toss on a lightly olive oil greased baking sheet. Bake for about the same time as the meatloaf and at the same temp 375 degrees. About forty mins. The longer you leave this in the more the potatoes will crisp and the flavors really incorporate. So 45 mins is good too. sprinkle with either dried or fresh dill and serve. I eat these veggies all week long. They hold extremely well in the fridge as well as the meatloaf.
Calories in meatloaf. Around 200 or less calories per mini meatloaf.
